Angels Among Us - Without Recognition

The other day I had the opportunity to help shop for, put together, and deliver Christmas baskets. Most of the folks we visited were widows or single elderly. One particular woman lives in a very humble abode, sparsely furnished and decorated, but very clean and neat. She's at an age where health keeps her from doing much physically, so she spends her days crocheting hats and scarves and such for others. She was so happy to see us, and thrilled to receive the food and treats we brought, but what was interesting was that she had to tell us of her good fortune. Someone, two different folks, had left for or mailed her money anonymously. This probably made Christmas for her so she could do something for family. Her children are all grown, and do help her a lot, but sometimes folks just don't tell you what they really need, so some observant someone sent her a gift of love, not needing recognition in return. She was so tickled, I wish I could share a snapshot of the look on her face as she told us what happened. To whomever that angel was, THANK YOU, for bringing a little bit of joy into this woman's life.
The more I dive into looking at the people I'm so very blessed to know, the more excited I get to share with you. I hope you enjoy these little snippets I'm sharing of the angels among us.

Angels Among Us - Part 1

I would like to share a little something about the people I'm so fortunate to know. There are so many in my life that are good, honest and decent people. People of faith, love and true willingness to give their time and means to lift and edify others.
One such person, well actually her whole family is amazing, but she in particular is incredible due to her willingness to lead us as our choir director. Some may say, "big deal!", and yes for her it actually is because she wears hearing aids. She's a young mom of 4, who, along with her husband just purchased a local motel. They are busy trying to be a part of the community, such as opening up their conference room to anyone who didn't have a place to go for Thanksgiving, or couldn't get out of town to be with family. They couldn't go back to their home state, so they made the best of it. I hear everyone who attended had a nice time, and there was plenty of food, provided via potluck.
I didn't realize this sweet young mom had a hearing issue as she sat behind me in church one Sunday and her voice was clear and sweet and she hit all the notes perfectly. After that Sunday we were gone for a bit traveling and when we got back that next Sunday the choir did a number during sacrament meeting which was so lovely. It was only after I joined the choir did I happen to notice her hearing aids, and that she sometimes needed a measure repeated so she could "hear" the music to better lead us. She has picked out the perfect piece for us to do for Christmas, a lovely version of The First Noel/Pachelbel Canon. We are very lucky to have her, and by the way, no one gets paid for what they do to in our church, so her sacrifice is a great gift to us.
Just one of the many angels among us I'm grateful to know.

Hot Buttered Cider Batter

A blast from the past for me, this recipe is easy and so delicious it's hard to not indulge all the time. When we lived on Adak Island, 1400 miles off the coast of Alaska, our dear sisters at church were all sorts of creative geniuses with food and home decorating ideas. I was introduced to this recipe through them, yet didn't take it with me when we left as I was calorie conscious and a bit silly, really. As we get older though we think back on fond memories and times with good people, so this tasty treat surfaced from that back corner of my little brain. Where does one go to find anything these days but Pinterest, so of course I found my way this recipe there, hurray!
I did a test run on my dear hubby and daughter the other night, which was a hit, so I'm back at blogging and sharing with you. I hope you give it a try, it's a wonderful way to warm your holiday nights, or days.

HOT BUTTERED CIDER BATTER

1 Stick of real butter, softened
1/2 c. brown sugar
1/2 c. powdered sugar
1 t. each cinnamon and nutmeg
2 cups vanilla ice cream, softened

Sweetened whipped cream

In a mixing bowl beat the butter and sugars until fluffy. Add the spices and and blend, then add the ice cream and mix. The butter, sugar mixture might stick to the bowl so be sure and scrape it down as you mix in the ice cream. Spoon into a freezer container and keep frozen until ready to use. Add two heaping tablespoons to each hot cup of cider and top with a dollop of whipped cream and a dash of nutmeg. 16-20 serving portions.  Enjoy!

Gingerbread House 2011

It's been sooooo long since I created a gingerbread house, something I love to do if given an opportunity. A local business is offering a $500 dollar 1st prize so that was incentive enough to try my hand at creating one again. It will be an interesting process and project as my FIL is at home from the hospital after a second bout of pneumonia. Although hospice is tending to his needs as far as prepping for the day or getting him ready for bed, I'm the primary caretaker now. He's so sweet, and so appreciative of all that's done for him that he makes it easy to care for him.
While he naps, I will try adding a bit here and there to my little house, in hopes of having it done by Saturday night. Things look a bit rough so far, but as with all creations, you start out with a rough up and then add detail until you have a finished product, with all flaws or oops! parts fixed or covered up. Lucky for me that frosting is a magic eraser or the perfect cover up, as this has been a challenge so far, working in a tiny kitchen without all my tools of the trade at hand. Wish me luck, this will be fun, but we shall see if it gets done. :-)

Cran-Apple Dream Pie

The other night we were having friends over for dinner. Hubby was fixing his delicious Chicken Curry with a lot of spice so I decided to create a creamy yet refreshing pie with a holiday flare. although there are several steps, this really is an easy peasy and so yummy pie, well worth the little bit of time put into making it. The cranberries can be rough chopped in the blender or food processor. Save yourself the headache of trying to chop each little cranberry or chasing them around the counter or floor. It's amazing the places you will find them later. ;-)
I used crumbs created from stale doughnuts that I cubed and lightly toasted before turning to crumbs as part of my crust ingredients but there are more possibilities such as crumbed short bread cookies, or the regular graham cracker crust. So I'm stating graham cracker crumbs in the recipe, but be creative! I never let anything go to waste, so if cookies are getting a bit dry or the same with cake, I just cube or crumble them up and dry them in the oven so I can use them for sweet crumb crusts later.
This pie has two main layers, one a creamy dreamy whipped cream cheese and whipped cream layer with a touch of grated orange peel. The other a fresh chopped cranberries and apples in jello. I used cherry jello as I didn't have raspberry, but try either and see which you like better. Cherry was very good, but I really want to try raspberry next time. Okay enough of this nonsense, on to the recipe!

CRAN-APPLE DREAM PIE
Serves 8
CRUST
1 1/2 c. sweet crumbs from graham crackers or shortbread cookies
1/4 c. sugar
1/4 c. butter, melted
In a 9" pie plate combine ingredients and press onto bottom and up the sides of the dish. In a pre-heated 350 degree oven bake for 5 minutes. Let cool on wire rack.

CREAM CHEESE LAYER
1- 8 oz. package cream cheese, softened
1/2 c. heavy whipping cream, whipped, buy a pint container of whipping cream so you have some for topping as well.
1/2 t. vanilla extract
1-2 t. greated orange rind
1/2 - 3/4 c. powdered sugar, to taste
In a mixing bowl beat cream cheese until soft and fluffy, add powdered sugar, vanilla, and orange rind, mix well. Gently fold in whipped cream until fully incorporated. Don't beat heavily as whipped cream will lose it's stiffness and the creamy filling will be too soft. Spread into the cooled crust and let set in the refrigerator while preparing jello layer.
JELLO LAYER
1- 3 oz. box Cherry or Raspberry Jello
1 c. boiling water
3/4 c. cold water
1 c. each chopped apple and cranberries
1/2 c. sugar
In a medium size bowl combine jello, sugar and boiling water, stirring to dissolve. Add cold water and let soft set in refrigerator. Add fruit and stir gently. Carefully spoon over cream cheese layer in pie plate. Let set until firm, about 1-2 hours.

WHIPPED TOPPING
1 1/2 c. whipping cream
3-4 T. powdered sugar
1 t. vanilla extract
In a mixing bowl combine ingredients and whip until soft stiff peaks form. Add a dollup to each piece of pie when served.

Natalie Cole and the Mormon Tabernacle Choir

I'm so excited to be going to the Mormon Tabernacle Choir and The Wondrous Gift of Christmas
Christmas Concert! Natalie Cole will be performing as the featured guest artist, wow! My hubby got online right when the ticket lottery opened and we found out that we got tickets! I love Natalie Cole, and the performances for the choir Christmas events are always spectacular. Even better is that it's free! So we get a top notch performer, the Mormon Tabernacle Choir, as well as twice Pulitzer Prize winning author David McCullough all in one and all we have to do is show up with our tickets. To learn more about these performances as well as others that might be coming up stop by here: http://www.lds.org/events/info/0,8197,726-1-740,00.html
Are you going to see any Christmas plays or concerts? We've been to see The Christmas Carole before at the Hale Center Theatre, as well as other concerts on Temple Square in Salt Lake City. The lights around the temple, as well as the creche displays are incredible. The conference center is decorated beautifully, and it's the perfect place to share the spirit of the season. My next years goal is to find a performance of Handel's Messiah. Or have my hubby get me the CD....lol. How about you? Are you going to see any Christmas plays or concerts? What do you like to do with family and friends this time of year?
