Grecian Game Hens
My all time favorite recipe from my husband, and always requested for my birthday or Mother's Day. This is sooooo to die for! Keeping it simple so here's the recipe!
GRECIAN GAME HENS
2 GAME HENS
9 CLOVES GARLIC
FETA CHEESE
BASIL
1 LEMON
3/4 LARGE ONION
SALT AND PEPPER
1 CAN OLIVES
CHERRY TOMATOES
RICE PILAF MADE W/ CHICKEN BROTH AND BUTTER AND PEPPER, 1/4 ONION, MINCED
(2 packages) NEAR EAST BRAND
BROWN GAME HEN(S) IN OLIVE OIL AND 5-6 MINCED CLOVES GARLIC, 1 TBSP BASIL, SALT, PEPPER TO TASTE. HALVE THE ONION AND THEN QUARTER ONE HALF. STUFF EACH HEN WITH A QUARTER ONION.
COOK FOR 75 MINUTES IN DUTCH OVEN WITH LID ON OR IN OVEN AT 350 DEGREES.
SEPARATELY -- COOK RICE PILAF
PLACE GAME HENS ON TOP OF PILAF ON LARGE PLATTER, AND PLACE LEMON SLICES TO THE SIDES. GARNISH WITH OLIVES, CHERRY TOMATOES, AND LOTS OF FETA CHEESE.

Tasty Tuesday - Latin Lover's Pizza
We had half the pizza gone by the time I realized I wanted to share this recipe. Yes, often times I don't plan to share, unless it's so good I would be stingy not to.
We've been trying to eat what we have on hand rather than run to the store ten times a week for this or that. Saves us money and we don't let things go to waste. Nature Guy wanted pizza so pizza he was going to get. I didn't have the usual ingredients on hand that we always put on, well at least not all. I did have canned mushrooms, onions and olives so that was a start. I also had frozen grape tomatoes so I used those diced for the fresh tomatoes.
What makes this pizza Latin is the dry salami instead of pepperoni, pepper jack cheese instead of mozzarella provolone, and green olives. So we figured we covered Italy, Mexico and Spain and thus the Latin. Anyhew, let's get to the recipe. I hope you give it a try, it was so good we are doing this again soon.
Latin Lover's Pizza Preheat oven to 450 degrees
Crust
1/12 cups warm water
2 scant T. yeast or 2 packets
1 t. sugar
1 1/2 t. salt
3 T. olive oil
4 c. flour
1/4 c. each flaxseed meal, oats and cornmeal
In a large bowl or mixing bowl combine the yeast, water and sugar. Let sit for 5 minutes until the water gets foamy. Add the oil, salt and 2 cups of flour, along with the other dry ingredients. stir or mix until well combined. Continue to add the flour 1/2 cup at a time. Once you have a nice ball of dough you can knead on a well floured board until smooth and elastic. Or let your mixer do it for you while you work on other ingredients. Once the dough is ready cut in half for thin crust, ***(see below),or use the whole thing for thick crust, and roll out on floured surface to the size of your pan. Sprinkle the baking pan with cornmeal to help keep the crust from sticking. Place rolled out crust on pan.
Sauce
1 6 oz can tomato paste
1 1/2 cups diced fresh tomatoes
2-3 cloves garlic, crushed
1 t. each Italian herb blend, and basil
Combine all ingredients in medium bowl and spread on crust.
Toppings
1 can whole or sliced black olives
1 small jar stuffed green olives
1 4 oz can mushrooms
2 cups pepper jack cheese
1/2 cup Parmesan cheese
1 cup chopped onion
20 slices of dry salami, chopped
I like to sprinkle the sauce with the Parmesan cheese before adding any other toppings. Then I add the onion, meat and cheese, then the mushrooms, and olives. Bake at 450 degrees for 10 minutes. Turn the oven down to 425 and continue to bake for another 15 minutes or until the cheese is bubbly and golden. Slice and enjoy!
***I make a small loaf of bread with the other half of the dough by forming a loaf and putting it in a well oiled bread pan or small cookie sheet and letting it rise until doubled. This can be baked at 375 for 35 minutes.

Summer's Fresh Bounty Enjoyed - Smoked Chicken & Tomato with Basil Openface Sandwich
My first full summer here in beautiful Wallowa Valley and the garden gods have been pretty good to me.
Our tomatoes are doing better than I had hoped, as the weather here can be rather unpredictable, but in spite of that I've been able to put up a batch of delicious pickled beets and roasted tomato salsa. I have a nice crop of Basil of different varieties, so pesto will be in the near future here. We are lucky to have a local grocery store that does smoked meats which is nice for those days when you want something simple and easy. The other day I had a craving for Italian something, anything, but I'm in the middle of a sculpting and painting frenzy in order to get ready for Hallowbaloo in Seattle. So I rummaged around my kitchen and fridge and this is the result. Nice nutty, whole grain bread topped with a smear of mayo and thin slices of fresh picked tomato, topped with shredded smoked chicken, topped with minced fresh Basil and a sprinkle of course ground pepper. Mmmm! Heaven!
Smoked Chicken & Tomato with Basil Openface Sandwich
Sliced whole grain bread of your choice
fresh, thinly sliced tomato
mayonnaise
smoked chicken
fresh minced Basil
course ground pepper.
spread mayo on bread, top with a single layer of sliced tomato, top with shredded smoked chicken, sprinkle with fresh minced basil and pepper. Enjoy!

Meatless Monday - Italian Quinoa Patties
For now I want to share a recipe I found on Pinterest and tweaked of course, that filled the bill for our meatless Monday plan. Quinoa is a super food grain that is also very versatile. We had these delicious patties, accompanied by fresh from the garden salad and baked potatoes. I made a creamy spicy mayo to top the patties with and even Nature Guy went back for seconds. We will do this again, perhaps as little meatballs for marinara. So yummy and easy as well!
Italian Quinoa Patties
1/3 c. quinoa cooked in 2/3 cup water according to package directions.
1/2 cup bread crumbs
2 eggs
1/4 tsp salt
1 tablespoon each fresh minced parsley and basil
3 tablespoons each fresh minced chives or green onion, and yellow onion
3 tablespoons parmesan cheese
Rinse your quinoa and add to small pan with the water. Bring to boil and turn the burner to low, cover the pot and simmer for 15 minutes. Let cool. After cool beat eggs and add those along with the rest of the ingredients and mix well. Let sit 5 minutes. Using wet hands form 4 patties about 1 inch tall. In a frying pan place 1 tablespoon of extra virgin olive oil and turn burner to medium low. Once hot add patties and cook covered for 5 minutes on each side. They should be golden. Serve with spicy mayo, recipe below.
6 tablespoons mayonnaise, 1 teaspoon spicy chile sauce, and teaspoon sweet chile sauce.Whisk together and serve with patties.
