Multi Grain Rye Bread for Autumn



Look at all that whole grain goodness, side by side with rich molasses and yummy sweet honey! Flaxseed meal, corn meal and whole oats were the start of what turned out to be a great bread for sandwiches as well as a great dunking bread for soup.
 The not so secret ingredient is rye flour, which rounds out the flavor in this dense but soft and filling bread.


I experimented by using coconut oil in place of canola oil. I always cut my oil measurement in half by adding applesauce, which has pectin that helps the dough rise and be soft and moist. This recipe will make two, and if you need to you can freeze one for later. 

Multi Grain Rye Bread

2 1/2 c. potato water, or tap water warmed up to about 100 degrees
2 T. yeast
1 c whole oats
1/4 c each corn meal, flaxseed meal and honey
3 T each coconut oil, applesauce, and molasses ( you can use 1/3 c oil in place of coconut oil and applesauce)
1 1/2 t. salt 
2 c rye flour
3 c each whole wheat and white flour

In a large bowl combine the warm water, yeast, oats, cornmeal, flaxseed meal, honey and molasses. Stir lightly and let sit for about 5 minutes, until the yeast starts to foam. 
Add the coconut oil, applesauce, molasses, salt and rye flour. Stir and then add 1 cup each of the whole wheat and white flour.  Stir again and then add the rest of the flour a half of a cup at a time, kneading as you go, until you get a nice smooth dough, about 10 minutes. Place back in the large bowl and then let rise until double in bulk. Punch down and form into two loaves. Place into large bread pans and let rise again until about an inch above the edge of the pans. Bake for 35 minutes at 375 degrees. Enjoy!

Autumn Magic

 The Sugar Maples in Middle Canyon outside Tooele, Utah are "putting on the Ritz" this year with a breathtaking array of color. Although it was warm the day we took this walk, you could feel a change in the air, along with a difference in the sunlight. There's a mellow cast to everything, and a softening of the look touch and feel, even in the temperatures.
 I spent the afternoon raking leaves from my Willow. There's something magical about a pile of crunchy, rustling leaves, that had me wishing my grandchildren were here to play in them.
The sweet, pungent odor of fallen leaves all piled up beckons wonderful memories of other walks in the woods, and playing in raked up mounds of earthy foliage. The God of nature gives us a gift each Fall, with a reminder that life is ever changing, and continuous. He sends us little gifts each season, and for me, Autumn has some of the most rewarding. Swaths of vivid color painted across the landscape, cooler temperatures that have us pulling out cozy sweaters, biting into a crisp, juicy apple straight from our tree, sharing our harvest bounty with friends and family, all a part of a season of change.
In this life aging is necessary, and so is dying, to continue on in the plan God has for us. The elderly have always held a dear place in my heart, so perhaps that's a part of why I love Autumn. The years of wisdom and knowledge our older friends and loved ones have, combined with a renewed courage to take life by the horns and enjoy their best years, is inspiring and strengthening. As we get older hopefully we shed the foolish trappings of our selfish youth, and put on a more glorious cloak of purposeful living, helping others find peace and joy. May today be a day of wonder and delight in the magic of Autumn. Share it with a friend or loved one won't you?

Happy Anniversary Honey!

We woke up to a cool and fresh morning, much like the one on our wedding day 12 years ago in Anchorage, Alaska. After having days and weeks of hot weather here, with no end in sight, the parched desert was drenched with torrential (isn't that a great word?!) rain. So this morning the air is clean, and the temperatures are what I would expect from a Labor Day weekend in Alaska.

It was a beautiful Saturday morning, the day we married, with the birch trees starting to show promise of the gold dressing they wear for Autumn. The skies were a vivid blue, with puffs of clouds here and there. A perfect Autumn setting, which I had always wanted, for the start of a new life together. We did it right, no living together first, or any of what goes along with that. We put our faith in God that we were doing the right thing, and he has helped us endure the challenges and grow stronger together. Our love has grown, because we have faith and trust in each other, and we like each other, along with loving each other. We made a promise to each other to be faithful, true and work together to have a happy life.

Here's to at least 12 more years together on this earth, and eternity to come. If that seems to be a short time to ask for, well, you never know what will happen, but the beauty of knowing that this life isn't the end for us is comforting. The knowledge that on August 31, 2002 we started our eternal life together is a blessing! I love you Kent. Thank you for asking me to be your wife.

The Colors of Autumn....Jewelry

 It's that time of year, when I put away summer clothes and bring out my Autumn wardrobe. For me, some items of clothing are like old and dear friends, colorful and vibrant, always there for you. This particular shirt I've had for around 20 years now, a sturdy but nice enough to wear anywhere top that has seen me through thick and thin, literally. Now that I've lost some weight and am getting down to my old sizes I can wear this again with joy!
I find that each season brings with it a palette of colors that often fit the mood I'm in. I find clothing, home decor, make-up and even jewelry that seems to be just perfect for that particular year. I went shopping yesterday and found some beads that caught my eye, not really for any reason but that they're pretty and I wanted them. When I sat down to play around with my new treasures, I realized that some of the beads would match my old and favorite shirt! This necklace and the matching earrings are simple, but perfect for a semi-casual top that is suitable for a walk in the woods, or going out for fish and chips with hubby. What I would love to do, and perhaps you may be interested, is to help create jewelry that goes with a new or old favorite outfit you have. We can go fancy, or simply, whatever you desire. Gingerbread Bats and Pumpkins, What fun!

Emmett and grandma, (that would be me) made some gingerbread bats, ghosties, and pumpkins last week. We had so much fun! Emmett especially loved testing the frosting.....
again.....
and again.....
and again. I wonder what time he went to sleep that night? Giggle! We used my favorite gingerbread recipe. It's definitely time tested as I used it numerous times to win grand champion of the Fairbanks Daily Newsminer Gingerbread House Contest. Here's the recipe so you can start planning now for creating your own gingerbread cookies, or even a house for the holidays.

Gingerbread Dough
5 c. flour, 1 t. salt, 1/4 t. nutmeg, 1/2 t. cloves, 3 T. cinnamon, 1 t. ginger
1- 1/8 t. baking soda, 1 c. shortening, 1-1/4 c. sugar, 1 egg well beaten,
1 c. light molasses, slightly warmed, 1/3 c. water

Sift together 1 c. flour, salt, spices and soda. Cream shortening, then add sugar gradually, beating until light and fluffy. Add egg, then slightly warmed molasses. Stir water into mixture. Stir in sifted flour and spice mixture gradually. Add the rest of the flour one cup at a time, until dough is soft and moist to the touch of your finger. Cover and chill 6-8 hours. Roll out on oiled foil to 1/4 or 1/8th inch thickness. Bake at 350 degrees 8-10 minutes. If you are making house pieces bake as dark as you can get it without burning. It's very important to bake house pieces long enough. Cookies don't need as long.

Tips for making gingerbread houses.
1. As soon as you take the pieces out of the oven lay your pattern over each piece and trim with a very sharp knife. This will insure that your pieces go together nicely. If the pieces start to harden before you get them all trimmed put them back into the oven just to warm them enough to trim easily.

2. In the widest frying pan you have, melt about 1 cup or more of sugar at a moderately low temperature until liquid. Dip one joining side into the hot sugar mixture and then quickly match up with other piece to make a corner. Continue to do this with all your pieces. The hot melted sugar makes a wonderful edible glue that hardens quickly and nicely. If you get drips on your pieces, wait until the sugar hardens and you should be able to remove them. This makes it a lot faster and easier to put all the sides and roof together, and it's much sturdier. I hope to make a small video to show you how it's done.
